 Between January and March, in Morella takes place the truffle days. Restaurants offer menus with the "black diamond" cuisine. And in fridays, the cooks do show-cooking in the town hall.

THE PLEASURE OF ITS AROMA AND ITS TASTE

The black truffle plays a very important role in the cuisine of Morella, one can enjoy a wide variety of recipes. It is delicious with scrambled eggs, raw with salads, sliced in a piece of bread with olive oil, in layers with vegetables and meat, in the stew and stuffed beef, inside the lamb, pork and beef, or in delicious handmade patés, with cold meats and fish which gives the truffle an excellent aroma, colour and taste. We can eat them even in desserts because the Morella gastronomy has experienced delicious combinations of ice cream flavours, sponge cake, cakes and liqueurs. This "black gold" is a key element of the innovative cuisine that has evolved without losing the ancestral culture of its flavours.
